ROGER BOULTON

Roger Boulton talks about the technology behind wineries of the future

Roger Brett Boulton is the Stephen Scott Professor of Enology and Chemical Engineering for the Department of Viticulture and Enology at the University of California at Davis. A native of Australia, Boulton holds degrees in chemical engineering from the University of Melbourne. He has won numerous awards, and was selected as one of the most influential people on the U.S. wine industry in 2000. His current research projects include the investigation of factors affecting the formation of hydrogen sulfide during wine fermentations; design and evaluation of a fluidized bed crystallizer for the recovery of tartrate salts from wines; reaction of hydrogen sulfide in model solutions and wines; and the determination of free sulfur dioxide in wine by capillary electrophoresis.
